- Take 1 1/2 cups basmati rice
- Prepare 3-4 boiled eggs
- Make ready 2 tsp ghee
- Prepare 2 tsp Oil

- Make ready 1 star anise
- Make ready 1 tsp jeera
- Make ready 1 tsp cardamom
- Prepare 1 tsp pepper
- Prepare 2 inches cinnamon stick

- Get 1 tsp ginger garlic paste
- Make ready 3 big onions roughly chopped
- Prepare 2 medium sized tomatoes
- Prepare 4 small green chillies
- Take 1 tsp Biryani masala
- Get 3/4 tsp Chilli powder
- Make ready As per taste Salt
- Make ready 1 cup curd
- Get 1/2 tsp turmeric powder
- Get 1/2 tsp Cumin powder
- Prepare 1/2 tsp Coriander powder
- Take 1 handful Mint and coriander leaves
- Take 1/2 tsp garam masala
Steps to make Hyderabadi Egg Dum Biryani:
- Boil the eggs, remove the shells and cut the eggs into two halves. Take a pan and heat the 2 tspn oil. Add 1/4 tspn chilli powder, 1/4 tspn turmeric powder and 1/4 tspn salt. Mix it well. Add the eggs and fry it in a medium flame for 5-10 mins until it turns given brown colour.
- Wash and soak rice for about 30 mins.Keep it aside. Take a pan and dry roast bay leaf, cardamom, cinnamon stick, pepper, star anise, jeera and coriander seeds until the aroma comes out.
- Then coarsely blend it with ginger garlic paste.
- Take a cooker,add ghee and oil to it. Once heated up, add the masala which was blended before and saute it well. Add 2 vertically chopped onions and saute until it turns transparent.
- Once the onions become transparent, add tomato puree to it and saute well for five minutes in a medium flame.
- Add chilli, cumin, coriander and garam masala to it. Mix it well. I added peas too (optional). After 5 mins, cooker the rice and add it to the mixture and saute evenly.
- Add 2 and a half cup water for 1 and a half cup rice. I used the rice measurement cup for water. Now is the time to add salt. Taste the water and salt should be little high. It will become even once the rice is cooked.
- Add the mint and coriander leaves to it and close the lid. Keep the stove in. Medium flame and leave the cooker for about 13-14 mins without whistle. Then turn off the stove and put whistle and leave the cooker again for ten mins. This is the secret of Dum biriyani.Try it out and leave the comments.
