- Add remainder of ingredients and mix gently with a spatula or wooden spoon.
- Divide muffin batter evenly between patty cake papers.
- Sprinkle with granulated sugar if you prefer a crunchy top to the muffin
- Bake in the oven for approximately 20-25 mins. Muffins will be springy to the touch when done.
- Cool slightly then remove to a cooling rack.
- Enjoy! Makes 12-15 muffins.
