This dinner dish uses my Mother's famous stuffed pepper recipe but I turned it into a casserole to make it quicker and easier. It's filled with ground beef, green peppers, diced tomatoes, rice and smothered in mozzarella cheese. This cheesy stuffed pepper casserole is a family favorite for sure! Like deconstructed stuffed bell peppers it's an easy casserole topped with lots of cheese you can throw together and even my kids love it!

Instructions to make Stuffed Pepper Casserole:
  1. Preheat oven 350 degrees Fahrenheit
  2. Cut the tops off the peppers, remove the steams and seeds
  3. Mix the meat and spices together
  4. Pack the meat into each pepper
  5. Place the top of peppers back on
  6. The leftover meat brown in a pan.
  7. Add spices of the sauce.
  8. Add tomatoes and raisins simmer 10 minutes add maple syrup and stir in
  9. Add the peppers in the sauce and bake in oven for 1 hour
  10. Add cheese to tops of peppers where the steam was.
  11. Take out of oven
  12. Cut the peppers down the middle and place in a pan
  13. Pour sauce over the top
  14. Add the rest of the cheese
  15. Put into oven for 30 minutes
  16. Serve add sour cream if you like. I hope you enjoy!
