- Preheat oven to 180° c
- Grease and flour a bread baking tin
- Measure all ingredients. Sift flour onto a bowl and set aside.
- In another bowl thoroughly mix margarine and sugar for 5-8mins or until pale in colour (creaming method)
- Add the vanilla essence.
- In a small bowl beat the egg then add it to the creamed mixture.
- Beat for 1minute or until the egg is fully incorporated.
- In a separate bowl, mash the ripe bananas (peeled) to a paste-like consistency. Add to the creamed mixture and beat for 1min.
- Add the flour, bit by bit, folding into the mixture until all the flour is fully incorporated.
- Pour the batter into the baking tin and level well. Place in the oven middle rack to bake for 25 minutes or until a skewer inserted comes out clean.
- Cool for about 5mins in the tin, then remove from the tin and place on a cooling rack.
