The name comes from the way of cooking this recipe which is in a 'kadai' or wok. A staple dish in every restaurant menu, this chicken dish is prepared at home on. Kadai chicken is another popular recipe from Northern India. Whole spices ground to a fine paste and cooked with onions, tomatoes and chicken chunks of the bone - the final dish is wholesome and delicious.
Steps to make Chicken kadai:
- Heat oil in pan, put cumin, clove, bay leaves and cinnamon.
- Then add ginger - garlic paste cook till raw smell is gone.
- Now add chopped onion, fry untill golden brown.
- Add salt, turmeric, kashmiri mirch powder and coriander powder saute them for 2 minutes.
- Add chicken cook on high flame for 5-6 min.
- Cover it and cook for 10 minutes on medium flame.
- Then add tomato pyuree, curry leaves, chicken masala mix well.
- Add 2 cup of water and let it cook for 10 minutes on slow flame.
- Add cream, garam masala and chopped coriander leaves stir gently and switch off the gas.
- Serve hot with rice, roti or naan.
