- Prepare 1 cup rice
- Take 2 cup salted water
- Get 1 1/2 lb ground beef
- Make ready 1 tbsp olive oil
- Take 3 green peppers - diced
- Make ready 1 medium onion - diced
- Take 48 oz seasoned tomato sauce ( 2 - 24 oz cans - i use a onion garlic sauce )
- Make ready 1 14.5 oz can petite diced tomatoes, undrained
- Take 1 tbsp parsley
- Prepare 1 tsp salt
- Prepare 1 tsp basil
- Make ready 1/2 tsp garlic powder
- Prepare 1/2 tsp paprika
- Take 1/4 tsp pepper
- Make ready 1 1/2 cup marble jack / colby jack shredded cheese
This dinner dish uses my Mother's famous stuffed pepper recipe but I turned it into a casserole to make it quicker and easier. It's filled with ground beef, green peppers, diced tomatoes, rice and smothered in mozzarella cheese. This cheesy stuffed pepper casserole is a family favorite for sure! Like deconstructed stuffed bell peppers it's an easy casserole topped with lots of cheese you can throw together and even my kids love it!
Instructions to make Stuffed Pepper Casserole:
- Preheat oven to 350°
- Combine rice and water & cook to your preference / bag instructions. Set aside when finished.
- In a LARGE skillet brown ground beef. Drain. Remove from skillet, set aside.
- In same skillet - saute onion and peppers with olive oil over medium heat for 10 - 15 minutes or until peppers start to become tender. Peppers don't have to be completely tender at this point.
- Stir meat and all remaining ingredients into skillet EXCEPT rice.
- Mix well - let everything simmer for a few minutes stirring often.
- Mix rice in.
- Pour mixture into a greased 9x13 baking dish. Bake for 30 minutes. Remove dish from oven and sprinkle top of casserole with shredded cheese. Bake for another 5 minutes.
- Let casserole rest for 10 minutes before cutting / serving. Enjoy : )
