- Make ready 2 kg Raw mango/
- Make ready red chilli whole one (8/9)
- Make ready Garlic (3/4) peel of the garlic skin

- Take Mustard seed 4 tsp (Fry & ground)
- Make ready Panch Phoron 4 tsp (Fry & ground)
- Make ready Chili flakes 3/4 tsp or to taste
- Take Chili powder 1/2 tsp or to taste
- Take to taste Salt
- Get 2 tbsp Coriander seed (Fry & ground)
- Get Sugar 4-8 tbsp (according to taste)
- Make ready 3 tsp Turmeric powder
- Make ready Mastered Oil 1 lit (as per you want)
These sometimes spicy pickles are also available commercially. The pickling process in India differs from other regions mainly due to an additional spice mixture added to them after. There are countless recipes for Indian mango pickles with each region having its own version—this particular one is from the state of Uttar Pradesh. This version of mango pickles (aam ka achaar) is from the northern state of Uttar Pradesh and is often eaten with stuffed parathas bread and yogurt.
Steps to make Mango Pickles/ Amer Achar:

- Wash raw mangoes, cut the mango in to small pieces along with the bottom hard skin
- Heat oil, add some red chili whole one and Garlic crackle them.
- Add sliced raw mangoes and stir spoon for 2 minutes and add chili flakes, coriander seeds ground, mustard seed ground, panch phoron (five-spice) ground, chili powder, turmeric and salt, also cook to tenderize for 4-5 minutes.

- When tenderized add sugar and mix.
- Off the cooker
- When it will be cold, it’s ready to pour in a clean jar.
- Note: If you do not like raw mango with peel in your pickle then you can peel the skin off.

Keep the Mango pickle in glass jar with lid on. Mango slices are nicely marinated with spices. Maa'm can i boil d water first and then add all sices to it,wil it help to keep the achar good for whole year. Ingredients: The pickle is prepared with raw unripe chopped mangoes, mustard seeds, curry leaves and some spice powders. The recipie is listed in chatni, achar, jam jelly and murabba.
