- Place chicken on a large tray. Then pour the mixture on top.
- Add the butter, then sprinkle with the chilli. Crush the garlic and add to the tray.
- Cover well with foil and transfer the tray to the preheated oven.
- Roast for 1 - 1 1/2 hours. Bare in mind times will vary depending on the oven used.
- Remove foil about 40-50 minutes after placing in the oven. Let the chicken roast uncovered for the remainder of the time.
- When cooked remove from oven and let chicken rest for up to 20 minutes covered with foil.
- Serve with gravy and roast potatoes.
