  2. Take 4 lb Hamburger Meat (I used 80/20)

  4. Take 1 medium onion, chopped
  5. Get 1/2 box Ritz Crackers (can substitute saltines or toast)
  6. Prepare 1 packages Dry Italian or Ranch Dressing Mix
  7. Prepare Salt
  8. Take Pepper
  9. Get Garlic Salt
  10. Make ready 12 oz Can of Tomato Paste
  11. Make ready 1 cup Ketchup

I never liked meatloaf growing up. As a matter of fact I didn't like meatloaf until I tried my husband's grandmother's. I don't know what she put in it, but I remember it was awesome. After experimenting I have finally come up with my own version and it.

Instructions to make Austin Family Meatloaf:
  1. Preheat oven to 375°
  2. Crumble raw hamburger into a large bowl.
  3. Crumble Ritz Crackers (Saltines or toast) into the same bowl with the hamburger.
  4. In same bowl add eggs, onion, salt, pepper, garlic salt & dressing mix.
  5. Add approx 3/4 of your tomato paste to the mixture.
  6. Mix everything together by hand (fun right?) until all blended together. :-)
  7. Spread in a sprayed or greased 9 X 13 pan and bake for 35 minutes.
  8. While meatloaf is baking take your remaining tomato paste and your ketchup and mix together.
  9. After 35 minutes in the oven spread the ketchup mixture on top of meatloaf and bake an additional 10 minutes.
