  17. Prepare 8-10 Cardamom
  18. Prepare 4 Bay leaves
  19. Make ready 1 Blade mace(javitri)
  20. Prepare 1 Star anise(phool chakri)

Instant Pot Vegetable Biryani - basmati rice is cooked with spices and vegetables in this very fragrant biryani which gets done easily in the Instant Pot! Veg Biryani is a delicious medley of rice, vegetables and a variety of spices. Compared to the other varieties of rice dishes like Pulao, Biryani has a stronger taste of curried rice due to a higher amount. This delicious Vegetable Biryani is as tasty as anything you'd find in a restaurant, but it takes less time to make than it would to order takeout.

Instructions to make Vegetable Biryani:
  1. Take a bowl and soak the 2 cup basmati biryani rice.
  2. Take a cooker add 2 tblspoon ghee/oil, add 5-6 cloves, 4 green cardamom, 1 inch cinnamon leaves, 2 bay leaves, 1 blade mace javitri, 1 star anise(phool chakri) stir well. Now add the soaked rice and mixed them well. add 2½ cups of water. Cook the rice.
  3. Take a pan or kadhai, add 3 tblspoon oil,add 1 tspn jeera seeds, 4 cardamom,2 bay leaves,1 cinnamon stick.Add the 2 chopped onions and stir fry. Add 1 small chopped potato and stir fry till the potato becomes half cooked. Add ginger- garlic paste and cook for 1 minute. Add all chopped vegetables and stir fry till it's half cooked.
  4. Add the peas and 8-10 cashew nuts and then cook for 1 minute. the 1 chopped tomatoes and cook for 2-3 minutes.
  5. Add the ¼ tspn turmeric powder, 2 tspn coriander powder,1tspn red chilli powder,1 tspn jeera powder, 2-3 tspn biryani masala and salt. Cook for 2-3 minutes.
  6. Add 2-3 tblspoon curd/yoghurt. Mix them well and cook till all vegetables cooked(not too soft). Add the 1 tblspoon coriander leaves and mix them well.
  7. Now the vegetable is ready,take the cooked rice and mix them well and garnish with fried dry onions,coriander leaves and saffron milk(optional). Vegetable Biryani is ready to serve.
