- Get 5 tomatoes (ripe)
- Take 1 bunch scallions
- Prepare 2 lemons
- Prepare 0,5 grilled chicken
- Take white wine (ca. 200 ml)

Steps to make Gabi's Lemon Chicken:
- Peel off the skin of the chicken (and eat) and debone. Make sure that no skin, bones, fat or gristle is left in the meat. They would ruin the dish. Wash tomatoes and cut into quarters or eighths. Wash and clean scallions, cut in 3 cm long pieces.
- Heat olive oil in a casserole dish or pot. Braise lightly the tomatoes and scallions in it. Deglaze with ca. 200 ml white wine and let cook for 5 - 10 min. Season with salt and black pepper.
- Add the meat of the chicken and the olives. Peel off the rind of the lemons, remove pips. Cut the lemons in slices, add to the chicken and serve as soon as everthing is hot. Don't cook too long - the lemons will get bitter.
- Baguette is a perfect match. As with all hotpots it also tastes great the next day but keep it in the fridge over night.
