- Take 4 sticks rhubarb
- Get 80 g granulated sugar
- Prepare 150 g butter or margarine
- Make ready 3 tbsp honey

A delicious rhubarb bar, great for the first rhubarb of the season, or to use up the last. Mix together and let set several hours or overnight. Then cook over low heat until thick. To make my oat mixture I melted a little butter and brown sugar and plenty of honey together before adding oats, ground almonds and ground ginger.

- Cut rhubarb into 3cm pieces. Sprinkle over 30g sugar. Roast rhubarb at 180C for 15 minutes until tender but still formed.
- Melt sugar, butter and honey in a pan or microwave. Pour over oats. Add raisins and stir to combine.
- Stir in ground almonds.
- Spread half of the oat mixture into a 20x20cm baking tray. Press down with a spoon.
- Pour over rhubarb. Then spread over the remaining oat mixture and press down.
- Bake for 20-30 minutes in a preheated oven at 200C until the oats are golden and pulling away from the sides of the baking tray.
- Cool completely before removing from the tray. Once cool cut with a sharp knife into rectangles. Store in the fridge. Keeps well for several days.
Finally I assembled everything by pressing two thirds of the oat mixture into the bottom of a baking tray, spreading the cooked-down rhubarb on top, and sprinking the rest of the oat mixture on top. Combine the rhubarb, coconut sugar, lemon juice and vanilla in a bowl and toss well to coat. Combine brown sugar, cinnamon, and salt; sprinkle over raisins. Combine oats and remaining flour; cut in butter until crumbly. Serve warm with ice cream if desired.
