- Prepare 1 cup pineapple
- Take 1 cup mint leaves
- Take 1 lemon
- Take 4 tbsp sugar syrup
- Get 400 ml soda water
Using the muddler, crush the pineapple, lime and mint leaves until fragrant. Add the rum, triple sec and pineapple juice (if using simple syrup or agave add it at this point). In a cocktail shaker combine rum, pineapple juice, honey syrup, and mint leaves. Use a muddler (or end of a wooden spoon) and smash the mint leaves into the drink.
Steps to make Pineapple mint mojito:
- In a blender jar,blend 3/4 cup pineapple and 3/4 cup mint leaves. Keep this puree aside.
- Using a mortar and pestle crush the remaining pineapple and mint leaves well. Add chopped lemon pieces also to it and crush them too.
- Take 2 glasses, put half crushed mix in each glass.
- Add the puree also half half to each glass.
- Add 2 tbsp sugar syrup to each glass.
- Mix it all well with spoon.
- Add 200 ml or as required soda water to each glass.
- Garnish with pineapple pieces and serve cold.
Fill the rest of the glass with sparkling water then garnish with some mint leaves! Strain into a tall glass filled with ice and top with club soda. Garnish with a sprig of mint. Obviously, I want to change things up a little, and keep the combination of sweetness, citrus, and herbaceous mint flavors, but make it a little more fun with a great twist, and also make the rum optional. Place the mint leaves in a cocktail glass, and squeeze the lime segments over the mint, placing the lime remnants in the glass after squeezing well.
