- fill pot with water to about 2 inches from the top.
- cook on high heat until out stats to rapid boil. lower heat to medium low.
- simmer for 4-6 hours, periodically adding water as needed as to not scorch your beans.. add salt and pepper to taste.
- stir beans frequently do they go not stick to the bottom. beans will start to float as they cook.. don't worry these are good beans.. :)
- beans are done when they are soft and you have a nice thick brown juice around them.
