Place the flapjack back into the cake pan and then pour the chocolate over the top. Make sure the chocolate is evenly spread, use a spoon or tilt the pan so it gets into all the corners. Sprinkle some sea salt on top. Place into the fridge to set for at least an hour.

  1. Preheat oven to 160°C. Grease and line a 7in/18cm baking tin.
  2. Put margarine, sugar and golden syrup in a large heavy pan and heat gently, stirring occasionally until margarine has melted.
  3. Remove pan from heat and stir in oats, coconut and chocolate until well combined. (The chocolate drops will melt in).
  4. Spread the mixture evenly in the prepared tin and, using a knife score the mixture into about 15 bars.
  5. Cook for about 25 minutes or until golden brown on top. Remove the tin from the oven and cut through scored lines while still hot. Leave to cool and harden, then turn out.

Nothing beats a good old chocolate flapjack. And this one is even coated in a layer of melted chocolate, yum! It's dense, squidgy and quite frankly delicious to look at. Melt the chocolate in a heatproof bowl over a pan of barely simmering water, then stir in the oil and pour over the chilled caramel flapjack base. Let the chocolate set, then cut into squares.
