  7. Place the flatten pita on the pan. Bake it for 2 minutes each side. It will puff.
  8. Continue with the rest of dough. Serve it warm with curry.

If making the sourdough version, mix the starter into the water too. Pita or pitta, which ever spelling you use, here's my sourdough version… As I have with other recipes, I've used my master recipe and process to make these. Yes, it looks like pita bread. I refresh my sourdough starter twice a day and feel some guilt when throwing away the leftovers. I perform small feedings to minimize waste but am always on the lookout for ways to use up all of the Moomin bits.
