- Take 1 kg brinjal
- Take 2 medium sized tomato
- Get 1 1/2 tea spoon salt
- Prepare 1 tea spoon red chilli powder
- Prepare 1/2 tea spoon dry coriander
- Take 3/4 cup oil
- Get Coriander leaves for garnishing
Steps to make Fried Brinjal:
- Take brinjals
- Take off their leaves and Wash them nicely
- Cut in pieces as you like (not too large)
- Take tometoes (only two) Wash them
- Cut in small pieces
- Now start cooking. Take a karahi and put brinjals in it
- Add oil
- Keep stirring and cook it on medium flame for 5 minutes.
- Now add salt,red chilli and dry coriander.
- Mix all ingredients
- Now cover the lid and cook on low flame
- After 2-3 minutes add tometoes
- Mix them.
- Now let them cook on low flame.keep stirring continuesly after 2 mints passed.Few minutes later they will change their colour and shape
- Now tometoes are almost cooked and brinjals are also looking tender but not completely done..Give them 5 more minutes
- Check your brinjals if they are ready and completely cooked, turn off the flame. (How to check :if your vegetable in tender and not hard it means it is properly cooked.. :) hope all new chefs can understand now :p
- Sprinkle coriander leaves.
- Dish out and serve with germa garam chapati, raita,salad
