The ingredients needed to make SW Dirty Spuds:
  1. Make ready Fry light spray oil
  2. Prepare 5 potatoes
  3. Get 2 massive onions or 3 large ones
  4. Prepare 1 pack smoked bacon medallions
  5. Prepare 2 peppers
  6. Prepare 30 g fresh coriander
  7. Get 6 spring onions
  8. Take 1 tbsp cajun seasoning
  9. Take 2 tbsp Worcestershire Sauce
  10. Take Pinch salt
  11. Get 80 g reduced fat cheddar
Instructions to make SW Dirty Spuds:
  1. Peel and cut the potatoes (I used Albert Bartlet Rooster potatoes). I prefer small roast potatoes but fries, chips or wedges are all fine too. Add them to an air fryer (I have a Breville Halo) and spray liberally with Fry light. Cook the potatoes using the instructions on your air fryer.
  2. Cut the onions in to big chunks and fry with Fry light oil in a large pan. Fry until they start to soften.
  3. Cut the bacon in to strips roughly 1cm wide and add to the pan with the onions.
  4. Chop the peppers up and add those, I used a green pepper and an orange pepper.
  5. Next cut the coriander up and add most of it to the pan including the stalks, keep back a small handful of the chopped leaves for later.
  6. Clean and chop the spring onions and add to the pan. Add the cajun seasoning, salt and Worcestershire sauce and stir well until everything is well cooked like a stir fry.
  7. Leave the pan until the potatoes are done, I usually have 15 minutes or so left. You can grate the cheese during this time, tidy up and get the plates out.
  8. When the potatoes are done, plate up, heat the stir fry back up on the hob, mix the remaining coriander in and serve on top of the potatoes.
  9. Finally, sprinkle the grated cheese on top and melt in the microwave or under the grill. You don't have to add the cheese or melt it. I find this dish tasty enough without the cheese. For Slimming World followers, the dish is only syn free if the cheese is from your Healthy Extra A.
