The ingredients needed to make Banana French Toast:
- Prepare 2 thick slices of white bread
- Prepare 1 small banana, chopped
- Prepare 2 tbsp light brown sugar (if you don't have any white sugar will work too)
- Make ready 80 g unsalted butter
- Take 2 eggs, beaten
Line a baking sheet with foil and place in the oven to warm. Add the cubes of French bread, and gently stir until the bread has soaked up all the liquid. Top with the banana and sugar glaze. In a shallow dish, whisk together eggs, cream, and cinnamon.
Steps to make Banana French Toast:
- Place a large frying pan over medium heat & add 50g of the butter. Put the beaten eggs into a wide shallow dish or plate. Dip the bread in the egg on both sides making sure it is completely coated. When the butter has melted carefully place the eggy bread in the pan. Allow to cook for about 3 minutes or until the bread has turned golden & slightly browned in places. Turn the bread over to cook for another 3 minutes on the other side.
- When the bread is done place it on a serving plate in a warm place while you cook the bananas. Add the rest of the butter to the pan & allow to melt. When the butter is foaming add the sugar & stir. Cook for 2 minutes until the sugar has melted then add the chopped banana. Stir to heat the bananas through & coat with the sticky sauce.
Repeat the cooking process, adding more butter as needed, with the remaining slices of toast. Top the French toast with caramelized bananas (recipe follows). Serve the French toast piping hot, topped with spoonfuls of the caramelized bananas. Variation: Sliced apples, pears, nectarines or peaches are all meltingly delicious when caramelized in butter and sugar. Just substitute an equal amount of whichever fruit you prefer for the bananas.
