Now take off the heat and let cool completely before you form the patty rounds.you can coat these in some flour or use beaten egg yolks or any other form of coating that may work for this recipe..it may mean you do some exploring or bit of risk taking.maybe use it on some of the shaped patties first, and try to pan cook them. And see if it works!!!so you can continue the rest of the batches.this way you will not waste away all your hard work just to crumble at the end..
