Chicken Biryani is a must prepare dish on most occasions. It is a simple, one-pot meal which is served with raita and salad. For those who do not want to invite guests for an elaborate meal. This stovetop version of the well-known Indian rice dish is made with chicken and seasoned with turmeric and ginger.

Steps to make Chicken biryani:
  1. For marination, add all the ingredients to chicken and mix well. Keep aside for 30 minutes
  2. For rice, wash the rice thoroughly. Add almost more than twice of water than the rice to a vessel and boil it. Add the rice to it and add all those ingredients in it. Allow it to cook for 25 minutes untill the rice is cooked. Drain the water and keep the rise aside.
  3. For masala, in a pressure cooker, add some oil, saute the onion along with ginger garlic paste and green chilli until it becomes golden brown. Add tomato, Coriander leaves, mint leaves, all the masalas, salt and saute until brown.
  4. To this mix add the chicken and mix well. Add 1/2 cup water to it.
  5. Close the cooker lid and leave the chicken to cook in high flame. After 1st whistle, reduce the flame and keep again for 10 minutes. Switch off and wait till all the pressure escapes.
  6. Open the lid and if you find much water, just switch on flame and cook until it is like semi gravy
  7. Now add your rice to it. Add melted ghee on top. If you wish, add mint leaves, coriander leaves, fried onions, fried cashew, fried yellow raisins on top. Simply close the lid and keep aside for 10 minutes
  8. You can open the lid and mix them. Biriyani is ready.
