  1. Preheat oven to 400.
  2. Brown ground beef. Add crushed tomatoes and simmer.
  3. Cut zucchini in halves and scoop out some of the middle.
  4. Rub olive oil all over zucchini.
  5. Add egg to cream cheese, mix, and spoon a little in to each boat.
  6. Add half of the Parmesan and Mozzarella cheese.
  7. Spoon plenty of meat sauce.
  8. Add the remaining cheese.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil and bake an additional 5 minutes.
