Steps to make Punjabi biryani:
- Take a pot, add water, salt and all spices (sabut garam masala).
- Cook on high heat until becomes boiling.
- Add soaked rice and cook 75%.(1kani taq).
- Drained water.
- Take another pot, heat up the oil and fry onions until becomes pinkish.
- Add chicken and cook on medium high heat until colour changed.
- Add tomatoes and cook for 2 minutes.
- Add green chilli and ginger paste,Tamarind and prune cook for few seconds.
- Add salt, biryani masala and all spices (garam masala) and cook on medium heat until chicken gets tender.
- Take a same pot, add make layers.
- Once layering is done. Add yellow food colour on top and let it rest for 15 to 20 minutes on low flame.
- Punjabi biryani is ready. Serve hot with raita.
