- Peel the turia and cut in 2 inch cylindrical shapes. Make a slit length wise for stuffing. Peel potatoes and make a slit in a cross. Peel onion an make a slit in a cross.

Add turia and onions and stir gently. Cover the pan and cook over low flame for 10 minutes or until the vegetables are completely cooked.
- Garnish with coriander leaves. Serve hot with roti, paratha or rice.
A wonderful combination of sesame seeds, curry leaves and ginger-green chilli paste giver a very distinct flavour to the otherwise bland potatoes. Lemon juice and coriander added towards the end really perk up the dish. The tender and sweet ridge gourd in my refrigerator took me back to those old days, I ended up making stuffed ridge gourd.
