The ingredients needed to make Mauritian Curry:
  1. Get 2 Tbs Olive oil
  2. Take 8 Curry leaves
  3. Prepare 1 Onion, Chopped
  4. Make ready 3 Garlic Cloves
  5. Prepare 1 Inch Ginger, Finley chopped
  6. Make ready 1 Cinnamon stick
  7. Take 4 Birds eye Chillies, Chopped
  8. Take Couple sprigs of Thyme
  9. Get 3 Tbs Mauritian Curry powder or Garam Masala
  10. Get 600 g Chicken Thighs
  11. Take 2 Tomatoes, Chopped
  12. Prepare 3 Potatoes, Cubed
  13. Get 1/2 Red Onion, Finley sliced
  14. Prepare Corriander leaves for garnish
Steps to make Mauritian Curry:
  1. Add the Onion, Garlic, Ginger, Chillies, Thyme, Curry leaves and cinnamon stick to a pre heated pan with oil. Fry down ingredients for about 5 minutes until onions are soft.
  2. Add the Curry Powder to a bit of water and create a paste. Add this to the pan and stir in. Keep on a medium low heat and be carefull not to burn the spices.
  3. I like to remove the skin, De bone and clean the chicken up before adding it.
  4. Add the chicken pieces, Chopped tomatoes and potatoes, thoroughly coat with the spices. Add warm water just below the level of the chicken and potatoes.
  5. Cook for around 25 minutes or till the chicken and potatoes are cooked through.
  6. Garnish with Corriander and thinly sliced red onions, Serve with rice or fresh Rotis👌
