They’re nice and they look fantastic. Pithla/Jhunka/Zunka (gramflour porridge) is something that I have loved my whole life.
Pithla/Jhunka/Zunka (gramflour porridge) I have been living in India throughout my life until I moved to London in February this year. While in India i have lived in Central India most of my life. Then I moved to the west, to the dream city of every Indian, Mumbai (formerly known as Bombay) for my career.
To begin with this recipe, we have to first prepare a few ingredients. You can have pithla/jhunka/zunka (gramflour porridge) using 15 ingredients and 7 steps. Here is how you cook that.
The ingredients needed to make Pithla/Jhunka/Zunka (gramflour porridge):
- Take 1 cup besan (gram flour)
- Prepare 1 tea spoon haldi (turmeric powder)
- Make ready 1 teaspoon salt (or as required)
- Take 1 cup water
- Get 1 green chilli
- Take a few curry leaves
- Get 2-3 cloves garlic
- Prepare 2 X2 inch cube of ginger
- Get 1 teaspoon mustard seeds
- Make ready 1 teaspoon cumin seeds
- Get 1 big onion
- Prepare 1 big tomato
- Get Generous amount of coriander (for garnishing)
- Take 1 spring onion (for garnishing) (optional)
- Make ready 1 tablespoon oil
Jhunka (Zunka Or Pithale): Nutritional Value Of This Besan Porridge. As mentioned earlier, besan is rich in protein and dietary fibre. Zunka is a gram flour-based recipe, prepared with veggies like cabbage, capsicum, beans, etc. Some call this as dry pithla or pitla and very popular in the Marathi Karnataka border.
Steps to make Pithla/Jhunka/Zunka (gramflour porridge):
- Mix besan (gram flour), haldi (turmeric powder), salt and water until no lumps are formed. (red chilly powder can be added if you like)
- Cut small pieces of ginger, garlic, green chilli and curry leaves and keep aside
- Heat one tablespoon of oil in a pan on high heat and add cumin and mustard seeds. Let it crack. Then turn the heat to medium high and add the cut ginger, garlic, chilli and curry leaves. Let it become crip and brown and take it out in a separate bowl (i love the flavour of burnt garlic and ginger in almost everything). This we call tadka.
- In the same pan (with the leftover oil from above step) add cut onion, cook until its translucent and add cut tomato and cook until its shiny (releases oil)
- Now add the gram flour slurry (which we made in step 1) by continuously mixing. Keep mixing with a spoon until it starts becoming a thick paste (you can add more water here if you need the consistency to be more runny)
- Take it out in a serving bowl and sprinkle the tadka (we made in the step 3)
- Garnish with coriander and spring onion and serve
Even if you do not have any vegetables in your pantry, just don't worry and go ahead with simple onions. Jhunka or Zunka is a vegetarian traditional Indian dish prepared in Maharashtra ,Goa and north Karnataka. It is essentially a chickpea flour porridge. It is also known by the name of pithla or pithle. It's ingredients are gram flour (besan) , mixed with water to form a semi-solid paste.
