  12. Prepare to taste Salt
  13. Prepare 1 cup Water
  14. Get 3/4 tablespoon Lemon juice
  15. Make ready 1/2 teaspoon Turmeric powder

Chicken Chettinad or Chettinad chicken is a classic Indian recipe, from the cuisine of Chettinad. It consists of chicken marinated in yogurt, turmeric and a paste of red chillies, kalpasi, coconut, poppy seeds, coriander seeds, cumin seeds, fennel seeds, black pepper, ground nuts, onions, garlic and gingelly oil. It is served hot and garnished with coriander leaves, accompanied with boiled rice. Add soaked tamarind pulp, chicken, salt and coriander powder.

Instructions to make Chicken Chettinad:
  1. Soak the khas-khas in a bowl of water for 20 mins. Then drain.
  2. Now dry roast the red chillies, poppy seeds, coriander powder and cumin powder till you hear popping sounds.
  3. Now grind the roasted ingredients along with ginger, garlic and 1 tbsp of water.
  4. In a wok, heat the oil. Sauté the onions till light brown.
  5. Add salt and turmeric.
  6. Now add in the tomatoes. Sauté for a minute.
  7. Add the paste. On medium heat, sauté this masala till oil starts to leave the edges. This should take 7-8 minutes.
  8. Next, add the chicken. Sauté for 4-5 mins, till it starts to change colour.
  9. Pour in the lemon juice. Sauté some more. Everything should have a rich glossy red colour.
  10. Finally, pour in the water. Boil on high heat.
  11. Cover the wok. Reduce the heat to medium, and cook for 15-20 mins.
  12. Take off the lid. Adjust the seasoning. Cook uncovered till the gravy becomes thick.
  13. Serve with white rice!

Cover and cook till chicken is done. Garnish with fresh cilantro or coriander leaves.
